Method
Mix filling ingredients in order given. Pour into unbaked pie shell. Bake in preheated 425º F (210 C Gas Mark 7) oven for 15 minutes. Reduce Heat to 350º F (180 C Gas Mark 4) and continue baking for 45 minutes or until knife is inserted into centre of pie filling comes out clean.
Cool.
Lightly whip cream with a small amount of sugar and 1/4 teaspoon vanilla until it easily drops off of the spoon. Garnish with whipped cream just before serving.
This pie does not freeze well but doesn't last long either
